Join us as we launch Curd Chronicles, an engaging new mini-series crafted by our cheese community, for our cheese community. This is more than a webinar-it's a celebration of the craft, culture, and curiosity that define California’s vibrant artisan cheese scene.
Each session dives into timely topics, from the transformative power of grass-fed and organic dairying-spotlighting one of our favorite local producers-to the art and science of product development, direct-to-consumer strategies, and the magic of cheese cultures. Whether you're a seasoned monger, a passionate maker, or a cheese-loving enthusiast, these conversations will inspire and inform.
Each session will be hosted live via Google Meet, beginning at 6 pm. Expect about 30–40 minutes of lively, expert-led content, followed by an open forum-your chance to ask questions, share insights, and connect directly with the makers and minds shaping our local cheese landscape.
In cheese, as in life, the joy is truly in the journey. Our speakers aren’t just experts-they’re innovators, risk-takers, and storytellers, eager to share both their successes and their learning moments along the way.

Curd Chronicles: Session 2 - Product Development
Join Kuba Hemmerling from Point Reyes Farmstead Cheese Co. as he covers their approach to R&D and walking through the full process, from the initial idea to the finished product, including shelf-life testing and market feedback.
Kuba Hemmerling joined Point Reyes Farmstead Cheese Company in 2009 as Head Cheese Maker and Plant Manager, taking charge of production for the company’s signature Original Blue. Since then, he’s played a key role in growing the creamery’s offerings, leading the development of new cheeses like Toma (2010), Gouda, and Bay Blue (2012). He helped launch the flavored Toma line in 2019—TomaProvence, TomaRashi, and TomaTruffle—followed by Quinta in 2021, and most recently, Fennel Blue and Truffle Brie in 2024. These additions have earned widespread recognition, picking up honors from the American Cheese Society, Sofi Awards, and Good Food Awards.
Kuba was born and raised in Miejska Górka, Poland, and earned an engineering degree in Food Technology from the Agriculture University of Poznań. His journey to the U.S. began with a work-abroad program that placed him at Traders Point Creamery in Indiana, where he honed his skills making everything from aged cheeses to yogurt and ice cream.
Before coming to Point Reyes, Kuba worked as Quality Assurance Manager at Davisco Foods Interntational in Minnesota, overseeing production and quality for their food ingredient division.
Now as VP of Operations, he manages two creameries and leads the Quality Assurance team. He’s also closely involved with the Robert Giacomini Dairy, just steps from the creamery, ensuring the milk supply meets the high standards Point Reyes is known for. He works hand-in-hand with the COO and Dairy Manager on everything from strategic planning to demand forecasting.
Outside of work, Kuba enjoys life in Point Reyes with his wife Jennifer and their son Enzo. He’s an avid sailor, cyclist, and home winemaker—and a devoted fan of his favorite European soccer team, Lech Poznań. These days, though, most of his soccer energy goes into cheering from the sidelines at Enzo’s games, where he's happily embraced his role as proud dad and unofficial assistant coach.

Curd Chronicles: Session 4 - The Power of Culture
Join Matt Brown, Head Cheesemaker and Plant Manager for Sonoma County’s Cowgirl Creamery . "The Power of Cultures" will explore how cultures transform milk into extraordinary cheeses by enhancing flavor, texture and complexity. Attendees will learn how cheesemakers, like those at Cowgirl Creamery, use cultures to create artisan cheeses that balance innovation with time-honored traditions.
Matt started his career in cheese at the Cowgirl Creamery Cheese Shop in the San Francisco Ferry Building, where he served as Head Buyer. His background and expertise in cheese buying, cheesemaking and numerous accolades earned for the cheeses his team produces will help provide an outstanding and engaging educational experience.

A celebration brought together by a lively and friendly group of experts and presenters from the wonderful world of artisan cheese. The festival promotes broad awareness of the artisan cheesemaking community and enjoyment of its products.
The California Artisan Cheese Festival is a nonprofit organization with the mission to educate people who want to learn more about artisan cheese, support the artisan cheesemaking community and its sustainability, and celebrate and enjoy the creations of the artisan cheesemakers.
